Herman Markowitz founded Factor's in 1969. "He was an Eastern European counterman," his daughter Debbie says. "He was the guy you came to and said,"Herman, I need two slices of lox, make sure you trim it and slice it not too thick and hand cut it. "After Herman passed away in 1973," Debbie said, "My mother was here day and night at the cash register, working as hard as she could, cleaning tables, walking around, knowing the customers.
